Strawberry Delight!
Waffles with Strawberry Ice-cream and Macerated Strawberries…
…the ultimate weekend brunch, lunch or dinner!
To make life easier, we used Urban Pantry Waffles because they are so good…
…but you can, of course, make your own!
The macerated strawberries give this dish a touch of tartness that balances the ice-cream beautifully.

Ingredients
6 waffles
½ punnet strawberries, to serve
1 tbsp Pistachios, chopped
A few mint leaves to garnish, if desired
Ingredients for the Macerated Strawberries
½ punnet strawberries, hulled and cut into pieces
4 tbsp sweetened balsamic vinegar
1 tbsp sugar
Ingredients for the Ice-cream
200ml cream
1 punnet strawberries, hulled and diced
2 tbsp sugar
Method for the Macerated Strawberries
Combine cut strawberries, balsamic and sugar in a bowl and let sit for 10-15 mins.
Method for the Ice-cream
Toss strawberries in sugar and set aside for 15 mins, then blitz in a blender until smooth.
Add cream and combine. Place in a freezer-proof container and freeze for at least 5 hours.
To Serve
Place waffles on a platter, add the strawberries and mint leaves.
Add the macerated strawberries and some of the juice.
Place scoops of ice cream in the centre.
Top things off by scattering over pistachios.
