Zucchini Fritter Subs with Creamy Chilli Mayo
For this week’s Monday Meal, we’re going to help you up your veggie intake with our vegetarian falafel subs!
We’ve used bite me zucchini fritters for a quick and easy sub that’s perfect for lunch.
These tasty little heat-and-eat fritters are made from certified organic, Australian-grown produce.
They are packed with zucchini, potato, onion, dill, mint, quinoa, peas and hemp seeds, and are cooked in organic coconut oil.

Makes 2
Ingredients
2 heaped tbsp mayonnaise
2 heaped tbsp sriracha or your favourite chilli sauce
2 heaped tbsp mustard
1 tbsp lemon juice
Long sourdough rolls
1 pack bite me zucchini fritters
Your favourite salad ingredients! We’ve used:
Lettuce
Tomato
Shaved carrots
Shaved cucumber
Spanish onion
Olive
Salt & pepper
Method
Mix mayo, sriracha, mustard and lemon juice in a bowl to make the chilli mayo.
Heat the zucchini fritters as per pack instructions in an oven, microwave or fry pan.
Slice the rolls through the middle lengthwise and spread the base with chilli mayo.
Pile up your salad ingredients and season with salt and pepper.
