White Bean Soup
One of the things we love about this heart-warming soup is that it can also be a comforting stew by cooking the liquid down until it starts to thicken a little.
You can also add chicken to this soup for a hearty winter dinner.

Serves 4-6
Ingredients
Olive oil
1 large onion, chopped
4 cloves garlic, crushed
3 carrots, chopped
3 stalks celery
2 bay leaves
2 cans crushed tomatoes
1/4 bunch dill
1/4 bunch fresh parsley, roughly chopped
4 spring onions, sliced
Extra virgin olive oil
Method
Heat the oil in a large saucepan over medium heat.
Add onion and sauté until softened.
Add celery stalks and carrots and sauté for 5 minutes.
Add the garlic and bay leaves and sauté for a few mins.
Add the tin tomatoes and beans, season with salt and pepper, and cook for 15 mins.
Divide between bowls and garnish with spring onions, remaining dill and parsley, and a drizzle of olive oil.
