Simple Leafy Green Salads
For this week’s Monday Meal we’re celebrating organic leafy greens and the brilliance of a simple green leaf salad.
These leaves are locally grown in Victoria, so we had to celebrate them.
Below are our two favourite simple salad dressings.

Balsamic Vinaigrette
3 part extra virgin olive oil
2 parts red wine vinegar
1 part balsamic vinegar
Coarse salt and cracked pepper to taste
Lemon Vinaigrette
1/4 c extra virgin olive oil
Juice of 2 lemons
Coarse salt and cracked pepper to serve
Method (same for both)
Place dressing ingredients in a small bowl or measuring cup; whisk to combine.
Pour dressing over your choice of leafy green salad and toss to coat.
Season with salt and pepper — and enjoy!
