Cheddar & Blueberry Salad
Blueberries might seem strange to include in a classic salad, but they work well as part of this week’s Monday Meal.
We served our salad with a simple olive oil and balsamic vinegar dressing.

Ingredients
1 soft leaf lettuce, washed
1 x 6cm piece Jacks Cheddar, cubed
6 baby cucumbers, sliced
4 spring onions, sliced
1 punnet blueberries
Salt & pepper
3 tbsp olive oil
2 tbsp red wine vinegar
1 tbsp balsamic vinegar
Method
Layer the lettuce, cheddar, cucumbers, spring onion and blueberries on a platter. Season with salt and pepper to taste.
Combine olive oil, red wine vinegar, and balsamic vinegar in a small bowl. Pour over the salad before serving.
