Greek Lemon & Oregano Lamb Chops

Greek Lemon & Oregano Lamb Chops

This is a classic recipe in many Greek households. The scent of the lamb grilling on the BBQ is intoxicating. Once you dress them with oregano and lemon juice, you’ll be licking your lips while you search for more!

We all scramble to grab the smaller chops straight off the grill, burning our fingers along the way!

You don’t need to marinate the lamb for long. 15 – 20 mins will do it.

We use proper Greek oregano, which comes dried still on its stalks. The flavour and scent are so much better than regular dried oregano.

Serves 4

Ingredients

1 kg forequarter lamb chops
¼ cup olive oil
Zest & juice 2 lemons
2 tbsp dried oregano
3 cloves garlic, chopped
Salt & pepper
Lemon wedges to serve

Method

Preheat BBQ over medium flame.

Cut the lamb chops in half along one side of the bone.

Combine oil, zest, and juice of 1 lemon, 1 tbsp of oregano, garlic, salt, and pepper in a bowl or bag. Add the lamb and coat well with the marinade.

BBQ lamb chops for a few mins on each side or until cooked to your liking. A little char on the edges makes them even more tasty!

Remove from the grill and place on foil.

Sprit over remaining lemon juice, season with salt and pepper, and scatter over remaining oregano.

Wrap them in foil to rest for a few minutes. If you can resist, that is!
