
Fig Rocky Road
We’ve used a mix of 50 – 50 milk and dark chocolate in this recipe; it gives it a nice balance, but you can just use milk or dark if you prefer.

Ingredients
100g dried figs, chopped
50g glase cherries, chopped
400g pink & white marshmallows
1 1/2 cups coconut flakes, plus extra to scatter on top
100g pistachios, roughly chopped
100g macadamia nuts, roughly chopped
400g dark chocolate
400g milk chocolate
Method
Place a sheet of baking paper in a 28cm x 16cm slice pan.
Place figs, cherries, marshmallows, nuts and coconut in a large bowl.
Melt the chocolate, pour over the dry ingredients, and mix well with a spatula.
Tumble the rocky road into the pan, scatter over the extra coconut, and refrigerate for a couple of hours until set.
Remove from the tin and slice.
