Strawberry Delight Waffles
Ah, waffles… perfect for weekend brunch, lunch or dinner!
We’ve used Urban Pantry Waffles because they are super good, but feel free to make your own.
For a touch of tartness that balances the ice-cream beautifully, we’ve topped off the waffles with macerated strawberries.
Macerating adds flavor by drawing out the fruit juices and making a yummy syrup that coats the berries.

Ingredients
6 waffles
½ punnet strawberries, to serve
1 tbsp Pistachios, chopped (optional)
A few mint leaves to garnish, if desired
Ingredients for the Macerated Strawberries
½ punnet strawberries, hulled and cut into pieces
4 tbsp sweetened balsamic vinegar
1 tbsp sugar
Ingredients for the Ice-cream
200ml cream
1 punnet strawberries, hulled and diced
2 tbsp sugar
Method for the Macerated Strawberries
Combine cut strawberries, balsamic and sugar in a bowl and let sit for 10-15 mins.
Method for the Ice-cream
Toss strawberries in sugar and set aside for 15 mins, then blitz in a blender until smooth.
Add cream and combine. Place in a freezer-proof container and freeze for at least 5 hours.
To Serve
Place waffles on a platter, add the strawberries and mint leaves.
Add the macerated strawberries and some of the juice.
Place scoops of ice cream in the centre.
Top things off by scattering over pistachios.
