Plum Muffins
These plum muffins are a great cook-ahead treat.
They’ll keep for 4 – 5 days in an airtight container.
Pop them in the fridge after the end of the second day, or freeze them for a couple of months.
We’ve used 3 Queen Garnet Plums and 2 red plums.

Makes 8 muffins
Ingredients
2 cups self-raising flour
2/3 cup sugar
80g butter, melted
1 cup milk
2 eggs, lightly beaten
5 plums, peeled and diced
Method
Preheat oven to 190°C.
Place all ingredients into a large bowl and gently mix until they come together.
Place 8 paper cases in a muffin pan and divide the mixture between them.
Bake for 30 mins.
