Marinated Baby Cucumbers
Baby cucumbers, or quakes, are perfect for marinating or quick pickling.
They’re young and have nice thin skin and a crisp bite.
You can use any micro herb to garnish. We’ve chosen red radish for the colour contrast.

Serves 4-5
Ingredients
1 x tub Qukes baby cucumbers
Marinade
100ml white wine vinegar
10ml light soy sauce
Juice of a mandarin or orange
1 tsp sugar
Garnish
1 spring onion, finely sliced on an angle
Coriander
Micro red radish
1 tbsp nigella seeds
Method
Slice qukes into spears.
Combine the marinade ingredients in a bowl and add the cucumbers. Refrigerate for about 20 minutes.
Drain the cucumbers and toss together with the spring onion.
Pile on a serving plate and top with coriander, nigella seeds and micro herbs.
