Green Goddess Spring-Inspired Salad

This sublime green salad is inspired by spring!

The dressing is a creamy concoction of avocado, yoghurt and sumac.

Sumac is a spice commonly used in Middle Eastern recipes. It’s a berry that is dried and crushed, and has a subtle lemony undertone.

You can leave the peas raw if you like.

Ingredients for the Salad

A handful pea pods
120 grams mixed lettuce leaves
1 avocado, sliced
1 Lebanese cucumber, thinly slice into ribbons with a peeler
5 spring onions, sliced
½ tub pea shoots

Ingredients for the Dressing

1 avocado, mashed
1/3 cup yoghurt
1 tbsp lemon juice
½ tsp sumac
½ tsp salt
½ tsp pepper

Method

Place the pea pods in a microwave safe container with a splash of water. Steam in the microwave for 2 mins. Pop them out of their pods when they’re cool enough to handle.

Place all salad ingredients in a serving bowl and scatter over the peas.

To make the dressing, add the avocado, yoghurt, lemon juice, sumac, and salt and pepper in a small blender. Blitz until smooth.

If the dressing is too thick, add a splash of water, or another squeeze of lemon juice if you prefer.

Pour the dressing over the salad and enjoy!
