Falafel Souvlaki with Pomegranate Tabouli & Homemade Tzatziki

You can also swap the burghal out for couscous if you prefer!
Ingredients for the Tabouli
3 tbsp burghul
2 firm medium tomatoes, finely diced (make sure you keep the juice)
½ tsp Baharat mixed spice
3 tbsp lemon juice
1 Spanish onion, finely diced
1 Lebanese cucumber, finely chopped
1 bunch parsley, washed and chopped
2 – 3 tbsp olive oil
½ lemons juice
Salt & cracked pepper, to season
Ingredients for the Tatziki
1 cup Caldermeade Farm Natural yoghurt
1/2 Lebanese cucumber, finely grated & strained
3 cloves garlic, crushed
1 tsp dried mint
Salt & pepper to season
Bite me fine foods vegetarian falafels
1 lettuce
1 tomato, sliced
1 Spanish onion, sliced
1 tub hummus
1 pack Mr Pita Pita Breads
To Make the Tabouli
Place the burghul, chopped tomatoes, lemon juice and baharat spice mix in a bowl and let the burghul absorb the liquids for about 5 mins.
Add the parsley, pomegranate, cucumber, onions, and olive oil, and season with salt and pepper.
To Make the Tzatziki
Place yoghurt, grated strained cucumber, garlic, mint and a good pinch each of salt and pepper in a bowl and mix to combine.
Heat a frypan over low heat.
Brush pita bread with olive oil, place in the pan and cook for 1 min. Flip and cook for another minute.
Heat falafels as per packet directions.
Place pita bread on baking paper or foil and start layering your souva ingredients – lettuce, tomato, onion, tabouli, tzatziki, hummus and falafels.
Fold over the side edges to enclose the souva and wrap with baking paper or foil to secure.
Mmm, mmm, good!
