Couscous & Chicken Lettuce Cups

Want a healthy dinner ready in 10 minutes?

No, we are not kidding!

All you need is 10 minutes to make Couscous & Chicken Lettuce Cups for this week’s Monday Meal.

It’s the perfect lunch or dinner. Or the perfect lunch leftovers the next day!

Ingredients

1 bag of your favourite From Basque with Love Couscous
1 twin pack of cos (Romaine) lettuce
1 Meadows Chicken Breast in your favourite marinade
Parsley or coriander for garnish
Your favourite salad dressing (optional — the couscous already has tons of flavour!)

Method

Prepare couscous per packet instructions.

Snap leaves off the lettuce, wash them, dry them, and place on a platter.

Slice chicken breast into pieces, and then slice through the middle.

Place a large spoonful of couscous on each lettuce leaf, add a couple slices of chicken, and top off with a parsley or coriander leaf.

If you are using a dressing, add a little splash to finish off these beauties and dinner is done!
