A good fresh green sauce or pesto takes lamb, beef, chicken and fish to new level of deliciousness and adds a fresh zesty burst to your meal.
You can you swap the basil out for parsley or coriander if you prefer.
You can also swap the pine nuts out for almonds or macadamia nuts.

1 bunch of basil
¼ c Pine Nuts
1/3 c Parmesan cheese, grated
¼ c Olive oil
Salt and Pepper, a good pinch of each
Place nuts in a small food processor and blitz for about 10 seconds.
Add Parmesan, salt and pepper in a small food processor and blitz for about 20 seconds.
Add olive oil and blitz until combined.
If it looks a little thick, slowly add more olive oil until it gets to a consistency you like.
Check the seasoning and adjust if needed.
