Chicken Butter Masala Two Ways
For this week’s Monday Meal we’re cooking up a storm with Shlokas butter masala ready-made sauce.
With a rich and creamy tomato base, mild spices, and a little tangy and sweet in flavour — it’s delicious!
We’ve used free-range organic chicken tenders in two ways because the kids love food on a stick.
We served our chicken masala with Chef’s Choice organic brown rice and sumac pickled Spanish onions (optional;see method prep note below), yoghurt and coriander
You can cook this healthy and flavourful dinner in around 30 mins – that’s how long it takes to cook the brown rice!
Just remember to put the rice on first; it takes longer to cook than white rice, but if you buy a good brand, it’s worth the wait, plus the health benefits too!

Chicken Method #1: On a Stick
Skewer chicken cubes on some on chopsticks. Yep, chopsticks.
They don’t burn like a skewer and you don’t even need to soak them! Just remember to make sure you have a pan they’ll fit in!
Rub the chicken in olive oil, season with salt and pepper, and pan-fry until just cooked through so they stay juicy.
Next, heat the sauce, pour it over, garnish with coriander or micro herbs, and serve with your favourite sides.
Chicken Method #2: Classic
Pan fry the chicken cubes in a little olive oil over low heat until sealed, then added the sauce and cooked until the sauce was hot and the chicken cooked through.
Method for the Rice
To spruce things up a bit, we cooked the rice per package directions, but used chicken stock and a touch of saffron for a little extra flavour.
The rice was nutty and tasty; the kids were disappointed when they came back for seconds, it was all gone!
Method for the Pickled Onions
Note: Optional; requires at least two hours to sit, so make ahead
Thinly slice 1 Spanish onion, and place in a bowl with 1 tbsp salt and 1 tbsp sumac.
Toss to coat and allow to sit for a couple of hours at least.
