Bombay Style Indian Dhal with Cauliflower

This week’s Monday Meal recipe is a quick and easy dhal dish.

Ingredients

Indian Dhal Lentil Kit
2 tbsp oil
5 c boiling water or stock, plus a little extra if needed
¼ c fresh tomatoes, chopped
Coriander to garnish
1 cauliflower, cut into florets

Method

Heat the oil in a deep frypan over medium heat and add the dhal mix.

Stir for 1 min, and then add tomatoes and water.

Cook, stirring regularly, for 40 mins.

Add the cauliflower and cook for a further 15 mins.

Serve with a little coriander for freshness.
