Figs are fantastic right now! They’re plump, juicy and have lovely thin skin.

They are known for their honey-like flavour and slightly chewy texture.

Pair them with creamy Fiore di latte cheese, peppery rocket, and the soft crunch of walnuts for the perfect summer salad!

Ingredients

300g rocket
8 figs, quartered
1 pink lady apple, thinly sliced and spritzed with lemon juice
1 tub Fiore di latte, torn into pieces
A handful of walnuts
Salt & pepper
Olive oil
Lemon juice

Method

Layer rocket, figs, apples, walnuts and cheese on a platter.

Season with salt and pepper, drizzle over about 3 tbsp of olive oil, and spritz with lemon juice.
