
Winter Inspired Pumpkin & Sweet Potato Soup
Pumpkin is fantastic value this week, so we’ve whipped up a delicious pot of our favourite soul-warming pumpkin soup!
It’s not just pumpkin, we’ve loaded it up with other vege so that it’s not only flavour packed, but full of nutrients too!
But don’t worry, pumpkin is the standout flavour!

Serves 8
Ingredients
500g pumpkin, cut into 10 cm pieces, skin removed
2 sweet potatoes, peeled and cut into 10cm pieces
2 potatoes, peeled and cut into thirds
1 large carrot, peeled and cut into 6 pieces
1 brown onion, roots removed
2 cloves garlic, peeled
4 c water or stock
Salt & pepper to taste
Herb Bouquet Garni
½ cup cream
Cracked pepper, to serve
Fresh parsley, to garnish if desired
Method
Place all ingredients in a stockpot and pour in enough water or stock to almost cover the veggies.
Pop on a lid and bring to boil. Turn heat to low and simmer until veggies are soft.
If there is still a lot of water in the pot and the soup is too runny, pour off a little liquid and reserve it just in case you need to add it back in.
Discard the onion and herb bouquet garni and blend with a stick blender or in a blender.
Ladle into bowls and add a swirl of cream and fresh parsley if using!
