Cherry Panettone Crumble
This simple cherry and panettone crumble will become a favourite for cherry lovers.
The juices from the cherries combine with the sugar and lemon to create the most unbelievable jammy sauce.
And it’s so simple, you can throw it together with pantry staples by using our sour cherry spoon set and Morello cherries.
If you want to cook the pantry staples version of this, use half a large jar of Morello cherries and a jar of our sour cherry spoon set.

Serves 8-10
Ingredients
500g cherries, pitted and halved
¾ c sugar
2 tbsp lemon juice
2 tbsp cornflour
1 tsp vanilla extract
Pinch of salt
1 panettone, around 750g, crumbled into small pieces
¼ c brown sugar
Big pinch of salt
½ c oats75g flour
70g butter, chilled
Method
Preheat oven 180°C.
Cut butter into very small cubes.
Combine cherries, sugar, lemon juice, cornflour, vanilla extract and salt in a bowl. Spoon into a 28cm ovenproof baking dish.
Add the butter to the oats, combine using your fingertips to create the crumble, and then mix in the panettone.
Spoon the crumble over the cherry mix and place in the oven.
Bake for about 35 – 40 minutes, or until the crumble is golden brown and the cherry mix is bubbling.
If the crumble looks like it’s browning to quickly, cover it with foil.
