Salami & Cheddar Cafe Style Toastie

Recipe for 1 sandwich; multiply as required
Ingredients
2 thick slices of sourdough bread
1/4 cup Jacks Cheddar cheese, grated
4 slices Salami
Handful baby spinach leaves
1/4 avocado
Small handful of parsley, chopped
3 tbsp mayonnaise
Butter, lots of butter
Method
Combine parsley and mayo and set aside.
Place salami, cheese, spinach, avocado and parsley mayo on one slice of bread and top with the other.
Heat a frypan over low heat.
Spread the bread with a layer of butter, and place it buttered side down in the pan. Butter the other side of the bread and cover with a lid.
Toast for 2 mins, and then turn the sandwich and replace the lid.
Check to ensure it’s nicely toasted and the cheese has melted.
