Orange Cake with Orange Icing

Orange citrus is gorgeous in a cake.

This one in particular is moist and delicious!

Ingredients

1 ½ cups caster sugar
3 cups self raising flour
4 eggs, lightly whisked
8 tbsp orange juice
Zest 2 large orange
1 cup milk
200g butter, melted

2 cups pure icing sugar, sifted
8 tbsp orange juice

Method

Preheat oven to 180 °C.

Grease and flour a 28cm cake tin and line with baking paper.

Place sugar, flour, eggs, zest, orange juice, milk and butter in the bowl of an electric mixer. Beat on medium speed for about 3 minutes or until the batter is fluffy and smooth.

Pour into prepared cake tin and bake for 40 mins or until a skewer inserted into the centre comes out clean. Allow to cool on a wire rack.

To make the icing, combine icing sugar and 6 tbsp orange juice and mix to combine. Add a tbsp or two more if needed to create a thick pouring consistency.
