
Greek Garlic & Olive Oil Mashed Potatoes
These mashed potatoes have a wonderful texture and fragrance.
Serve beside your favourite protein or stew.

Serves 5-6
Ingredients
1kg yellow flesh potatoes, peeled and quartered
8 cloves garlic
Juice 1 lemon
½ cup extra virgin olive oil
Salt & pepper, to taste
Method
Bring a large pot of salted water to the boil. Add the potatoes and cook for 10 mins.
Bruise the garlic with the flat of a knife, discard peel.
Add garlic and cook until the potatoes are tender.
Drain well and pass potatoes and garlic through a potato ricer. You can also mash them with a masher, but the ricer guarantees a smooth, silky mash.
Season with salt and pepper to taste.
Add lemon and ½ the olive oil. Beat with a fork or a wooden spoon to combine.
Spoon into a serving bowl, drizzle over remaining olive oil, and grind over extra pepper.
