Egg Lettuce Wraps

School is back and we’re focusing our attention on school lunch ideas.

Keeping things interesting in a kid’s lunchbox can be tricky, but we’re working on some creative ways to beat lunchbox boredom.

You can expect some colourful rainbow lunchboxes, plus many innovative and tempting meal ideas to wow your kids!

These creamy egg lettuce wraps are a great way to get some protein into your lunchboxes.

In place of lettuce, you can also use mountain bread wraps or street tacos.

Ingredients

5 eggs
1 tbsp butter
1 – 2 tbsp mayonnaise or aioli, to taste
Salt & pepper, to season
1 head of your favourite lettuce, we’ve used oak leaf

Method

Place eggs in a saucepan and cover with water.

Bring to the boil and cook for 4 mins from the time the water started boiling.

Run eggs under cold running water and peel them.

Place peeled eggs in a bowl and break them up with a fork.

Add butter, mayonnaise, salt and pepper, and fork it through to combine.

Check seasoning and adjust if needed.

Wash the lettuce leaves and dry them well.

Spoon egg mixture into the centre of each leaf, and then wrap the lettuce around the eggs, making sure to tuck in the bottom.

Wrap them in glad wrap or baking paper, and you’re all set!

TIP: You can easily switch up the flavours of these creamy egg by trying the following:

  • Go Old School – Add a heaping teaspoon of curry powder or mustard powder
  • Don’t Care for Mayo – Swap it out for more butter, or try sour cream
  • Mix in Some Greens – Add freshly chopped soft herbs such as chives, tarragon, or parsley, or finely sliced spring onions
  • Add a French Twist – A teaspoon of Dijon mustard, wholegrain mustard, or Hot English Mustard will kick things up an notch
