Crispy Baked Chicken Schnitzel
For this week’s Monday Meal we’re serving up Schnitzels.
They’re tasty when baked in the oven.
Don’t skip the olive oil spray; it stops the crumbs from drying out.
These schnitzels are perfect for burgers, too!
We’ve served them simply with a little coleslaw in a radicchio leaf.

Serves 4-5
Ingredients
6 chicken thigh fillets
2 cups breadcrumbs
3 eggs
1/3 cup Plain Flour
2 cloves garlic, crushed
Spray olive oil
Method
Preheat oven to 180°C.
Place the eggs in a bowl, add salt, pepper and garlic, and whisk to combine.
Place breadcrumbs and flour in separate bowls.
Slice the thighs through the middle. Coat the chicken in flour and shake off the excess.
Dip the chicken into the egg, then coat it with crumbs. Press the crumbs into the chicken so they adhere well. Repeat with remaining chicken pieces.
Place the chicken schnitzel on an oven rack over a tray, spray generously with olive oil.
Bake for 30 to 35 minutes or until cooked through and golden.
