Plum Pudding Cupcakes with Vanilla Frosting
These cute and tasty cupcakes are made with plum pudding!
They are a great Christmas hack for a quick, no-bake dessert or treat.

Ingredients
1 Mandi’s Kitchen plum pudding roll
250g icing sugar, sifted
80g butter at room temperature
25ml milk
a few drops of vanilla extract
1 pack Dench Baker’s mini gingerbread friends
Method
Line a cupcake tray with paper liners.
Crumble the fruit pudding, divide it into eight, and roll it in your hands to form a cupcake size, compressing them as you go so they hold their shape. Place them in the paper liners.
Beat the icing sugar and butter on medium-low heat until well combined – about 5 minutes.
Turn the speed to low and beat in milk and vanilla. Once incorporated, turn the speed high and beat until light and fluffy. At least 5 minutes.
Spoon the frosting into a piping bag and pipe onto each cupcake.
Top with a gingerbread friend.
