Mexican-Style Beans

We love Mexican flavours and have brought together some of our favourite Mexican products to make your life easier and make your taste buds sing!

These beans are great for burritos, tacos, enchiladas and nachos.

Up the chilli if you want to serve it as a flavourful chilli con carne.

These beans may not look pretty, but they are full of flavour!

You will find all of the ingredients in-store!

Ingredients

1 400g can Chef’s Choice black beans
1 400g can Chef’s Choice red adzuki beans
Olive oil
1 onion, chopped
5 cloves garlic, crushed
1 tbsp ginger, grated
2 tbsp Barnáe Mexican seasoning, plus 1 tsbp to garnish
1 can crushed tomatoes
1 tsp dried chilli or a whole red chilli sliced
1 cup vegetable stock or water
Fresh coriander, to garnish

Method

Rinse and drain beans.

Heat a frypan over medium heat, add olive oil, pinch of salt, and onions. Sauté for 4 mins.

Add garlic and ginger and sauté for 2 mins.

Add seasoning, tomatoes, chilli and stock and cook until the beans are hot.

Garnish with more Mexican Seasoning and coriander.
