Portuguese Roasted Corn Cobs
The flavoured butter in this corn recipe is a taste sensation!
We’ve used Barnae Portuguese spice mix and Caldermeade Jersey Garlic & Herb Butter.

Ingredients
4 cobs of corn, peeled & silks removed
1 tbsp Portuguese spice mix
1/2 roll Jersey Garlic Butter, at room temp
5 spring onions, finely diced – reserve some to garnish
1 red chilli, sliced, to garnish
Method
Preheat oven to 180 degrees.
Mix the spice mix, butter and spring onions, and brush over the corn.
Place in a baking tray, loosely cover with foil, and roast for 15 mins.
Remove foil, baste the corn, turn it over, and roast for another 15 mins, basting a couple of times.
Place on a serving plate, brush over any remaining butter, and scatter over spring onions and chilli.
