Serves 5-6

INGREDIENTS FOR DRESSING

2 small garlic cloves minced
4 tbsp Parmesan
4 tbsp olive oil
2 tbsp lemon juice
A good pinch of salt, pepper, paprika & sugar

INGREDIENTS FOR SALAD

150g washed wild rocket
½ red onion finely sliced
2 mandarins peeled and cut into cubes
80g torn prosciutto
3 handfuls of croutons

METHOD FOR DRESSING

Put all ingredients into a jar and shake really well. Set aside until salad is ready to be dressed.

METHOD FOR SALAD

Combine wild rocket, onion, mandarins and prosciutto into a bowl and toss to combine ingredients. Pour dressing over salad and toss so the salad is evenly covered in dressing. Serve & enjoy!
