Cheesy Eggy Bites
We are serving up increasingly popular Eggy bites for this week’s Monday Meal.
They are so quick and easy to make and just plain delicious!
And they get light and fluffy as they cook; the texture is fantastic.
They’re an easy breakfast and great morning tea or snack in lunchboxes.
You’ll need a 12-hole small pan, preferably a rounded bottom one used to make fairy cakes.

Ingredients
4 eggs, lightly beaten
1 cup grated cheese of choice; we’ve used Mozzarella
2 tbsp chopped chives
Salt & pepper to season
Olive oil to grease the tray
Method
Preheat oven to 200°C.
Grease the tin with olive oil.
Whisk the eggs, cheese, chives, salt and pepper until it’s frothy and air has been incorporated into them.
Fill the tray cups to the brim and bake for around 8 mins or until puffy and cooked through.
Remove from tray with a small spatula.
