Star Anise Spiced Pear Cocktail

The scent of the pear-spiced sugar syrup fills the house with a Christmas vibe and is the perfect winter cocktail to warm your soul!

Makes 2

Ingredients for the Cocktail – per glass

60ml gin
30ml pear sugar syrup
Star anise, to serve
Cinnamon quills, to serve
1 pear, sliced into rounds and slit on one side to the middle
1 pear, sliced into rounds

Ingredients for the Spiced Pear Sugar Syrup

1 cup sugar
1 cup water
3 pears, cored and cubed
1 star anise
1 cinnamon stick
2 cardamom pods

Method for the Spiced Pear Sugar Syrup

Combine all ingredients in a small saucepan and simmer over low heat for 25 to 30 mins. Allow to cool.

Making the Cocktail

Combine gin and pear sugar syrup in a glass.

Place a pear slice on the glass rim, and another in the cocktail with a cinnamon quill and star anise.
